Watermelon + Feta Salad
Share
aka the taste of summer
This watermelon and feta salad is one of those recipes that's almost too simple to call a recipe, you literally can’t mess it up. We served it alongside homemade pizza drizzled with hot honey, and let's just say there were 0 leftovers.
The ripe watermelon, salty feta and sweet honey are about as refreshing as it gets.
Here's what you need:
Ingredients
+ 1 watermelon, cut into bite-sized cubes
+ 1 large English cucumber
+ Crumbled feta
+ Fresh basil from the garden, chopped
+ Royal Honey
Directions
Measure with your heart, toss everything together and add a little more Royal Honey for good measure. Serve cold + enjoy!
Finding the perfect watermelon…
We get it, it’s hard. That’s why we asked Bud how to find the best watermelon. Here’s a farmer approved checklist✔️
🍉 Find the field spot. Look for a creamy yellow spot where the watermelon rested on the ground. A deep buttery yellow usually means it had time to ripen on the vine. If the spot is white or barely there, it was probably picked a little early.
🍉 Pick it up. It should feel relatively heavy for its size.
🍉 Check the stripes. Look for well-defined light green stripes that run the full length of the melon. Then place two fingers side by side in between the stripes. If the space is about as wide as your two fingers, Bud says you've got a good chance of taking home a sweet one.
Now all that's left is to slice it up...and try not to eat half of it before making the salad.
