Liquid honey is honey in its most natural form and most commonly found on store shelves. Our liquid honey is produced by our own bees, carefully extracted, lightly strained to remove natural debris, and bottled right here at our family apiary in Royal City, Washington.

And yes, raw honey will naturally crystallize over time! That is a sign that the honey is pure, real and unadulterated. When it crystallizes can vary depending on the honey's floral source and storage conditions.

How We Make Our Creamed Honey



Making great creamed honey isn't as simple as whipping honey until it's fluffy. The texture comes from carefully controlling how the honey crystallizes.

1. We Start With Our Honey

Our creamed honey begins with honey produced by our own bees. We almost always use our canola-sourced honey as the base because its natural characteristics make it especially well suited for creating the fine, creamy crystals we're looking for.

2. We Add a Fine Crystal "Seed"

To encourage the honey to crystallize evenly, we introduce a small amount of finely crystallized honey, often called a seed.

Think of these tiny crystals as a template. They give the honey a starting point and encourage new crystals to form around them rather than allowing larger crystals to develop on their own.

3. We Carefully Control the Crystallization

The honey and seed are thoroughly mixed and held under controlled conditions while the crystallization process takes place.

Temperature plays an important role here. We want the honey to crystallize slowly and evenly, allowing those tiny crystals to develop throughout the jar.

4. The Result Is Smooth, Creamy Honey

As the honey crystallizes, those fine crystals create the texture creamed honey is known for. Instead of the coarse or gritty crystals that can sometimes develop when honey crystallizes naturally, properly creamed honey has a smooth, velvety consistency that stays easy to spread.

That's the beauty of creamed honey: we're not changing what honey is. We're simply giving it a texture that's a little different from the liquid honey you might be used to.
